Inspired by the Avocado Feta Salsa (I saw it on Pinterest, so actually just inspired by the picture of it), I have been obsessed with this salad for months now. It’s my favorite go-to salad when I have enough time to make it and have the right ingredients. I didn’t read the ingredients from the recipe since I only saw the picture, but the way I make it is quite similar to the original – I just don’t use it as a salsa.
Ingredients
Here is what I put into mine (enough for a large bowl, which you can split into two portions, if you like, but I eat it as a meal):
- 1/2 avocado
- 1/2 tomato
- 1/2 cucumber
- A bit of minced onions (maybe 2-3 slices) – I prefer red onions, but in their absence have used regular onions
- A few tablespoons of feta cheese
- Sometimes I also add veggie chips for a bit of a crunch and to make it more filling
There is no oil or dressing that the salsa recipe uses because, honestly, I think there is plenty of flavor here already. I love being able to taste all the different ingredients – as long as you don’t add too much onions to overpower everything else, the harmony is quite amazing.
