This cheesy rice came into existence after I inherited some white queso that my mom didn’t know what to do with. I never cooked with queso before either, so I had no idea how it would turn out, but it seemed like the best pairing would be rice. Of course, some veggies need to be thrown in and the delicate nature of white queso called for a delicate protein – shrimp. And this super simple dish made on a busy weeknight turned out to be a big hit.
Ingredients
- 2 cups rice
- 1 red bell pepper, minced
- 1 zucchini, grated or minced
- 1 lb. shrimp, peeled and tail removed
- 1/2 lb. cheese of choice
Instructions
Cook rice as you usually would, but throw in the shrimp in there to cook as well. While the rice and shrimp are cooking, mince a red bell pepper (yellow or orange would work as well) and mince or grate a zucchini. I like grating zucchinis because it’s so much faster and easier, but the peppers don’t grate so well. When the rice is done and still hot, add the red pepper and zucchini and mix. Then add the queso or any other cheese of choice that melts well and mix again. That’s it – easy and delicious!
