I saw a recipe once of pizza pockets, but they were made with just pepperoni and cheese, which I don’t like. So I decided to make my own pizza pockets (also called calzones), but with better ingredients. I used wheat flour for the dough and spruced up the insides. Then we grabbed the calzones and ate them at a picnic on the beach.
Ingredients
- pizza dough
- cooked chicken meat
- spinach
- tomato sauce
- mozzarella cheese
- olive oil
Directions
First, make the dough (I followed the same recipe I used in my pizza). When the dough has risen, separate it into small balls and roll it out into thin sheets. If you wish, you can roll out a large sheet and use round cookie cutters or a glass to cut out the circles, but I am not fond of that method. On the sheets of dough, add some tomato sauce to the center and spread it around a bit, leaving about half an inch around the edges untouched. This will allow the dough to stick together when closing up the calzones. Then, add spinach, chicken, and cheese on top. Proportions are up to you.
When all the ingredients are added, lift up the edges and pinch them together to close up the calzone.
When you have all your calzones closed up, use some olive oil to line a baking dish. Then rub olive oil on each calzone and place it in the dish. Add more oil if you are packing them together tightly so they don’t stick to each other. I used two layers so that they could stay flat.
Bake until the tough is cooked all the way through and the cheese is melted, approximately 30-40 minutes. Then grab them and go have a picnic!
