Call me crazy, but I actually don’t like pepperoni pizza, or even pepperoni itself. My first ever post on this website was about making homemade pizza from scratch. So when I saw someone making pizza waffles with pepperoni, I knew I had to make them my way. These aren’t the simple pizza waffles – these are sophisticated, and can be tailored to whatever ingredients you like.
First, make the dough. See my pizza post for the how-to on that, or use whatever recipe you already use. I used to make the dough out of wheat flour for years, but I honestly never really enjoyed the taste, so I switched to white flour for baking and cooking. I still love wheat bread, but wheat pizza dough didn’t end up being my thing.
Next, mix the ingredients. In this case, I sauteed the mushrooms (we are not fans of raw, crunchy mushrooms in pizza) and spinach, added rotisserie chicken and cheese, and mixed it all together. Make as much as you need to fill the dough and use whatever ingredients you enjoy. Red onions and chicken with barbeque sauce? Yum. Straight up spinach with lots of cheese? Can’t wait to try! Whatever you would try on a pizza can also go in here.
Roll out the dough with a rolling pin and add the ingredients and the sauce. Here, I am using alfredo sauce, but feel free to get creative. Also, you can smear the sauce on the dough and don’t have to put it in the middle like I did here. I was just trying something new and it didn’t really make a difference.
Fold the dough together into a calzone and pinch the sides really well.
When the waffle maker is preheated, oil the calzone so it doesn’t stick to the sides and put it into the waffle maker. Press it down and let cook until golden brown on the outside and cooked through. As you can see here, I didn’t do a great job at pinching the sides, but the crunchy cheese is a bonus!
Super simple and so good! They are also great as breakfast, lunch, or dinner.
